TOMATO SAUCE
SAUCE:
Cut prosciutto into 1/2" chucks and fry with chopped onion in olive oil over low heat , until fat is rendered and meat is crisp. Remove meat and set aside
Drain the tomatoes, finely chop them and add to the onion in the pan. Season with red pepper flakes and salt and pepper. Simmer 20 minutes, stirring occasionally.
TO SERVE:
Cook pasta according to directions on package. Drain well. Transfer sauce to large skillet over medium-high heat. Add the skillet from heat. Add cheese.
