Fish in Black Bean Sauce

Instructions:

  1. Rinse fillets & pat dry. Add to marinade for 20 minutes. Drain and discard ginger.
    Heat oil wok. Add seasonings & stir fry for 10 seconds. Add Fish Sauce: heat 2 minutes, stirring constantly. Pour over in baking dish.
  2. Fill wok with water to bottom of steamer tray. Heat til boiling. Steam fish for 10 minutes, covered, high heat until flakey.

The Chinese fermented black beans in this recipe give the dish an unsual earthy aroma.

It is richly flavored dish that is also low in fat.
